Another Pumpkin Bread Recipe

I've seen many different pumpkin bread recipes in my time so I thought I'd post another one for you to see or copy to make for yourself and your family.

Pumpkin Bread
Ingredients

1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1-3/4 cups sugar
2 large eggs
2 tablespoons plus 1 teaspoon extra-light olive oil
3/4 cup canned unsweetened pumpkin puree
3 tablespoons water

Directions

Preheat the oven to 325 degrees F. Lightly oil a 9 x 5-inch loaf pan. In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. In a large bowl, with an electric mixer, beat together the sugar, eggs, oil and pumpkin. Add the flour mixture to the pumpkin mixture alternating with the water, beginning and ending with the flour mixture. Mix only until blended. Do not overmix. Spoon the batter into the loaf pan. Bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Let the loaf sit in the pan for 15 minutes, then turn out onto a wire rack to cool completely.

NOTES:  Makes 1 loaf (about 12 slices).

  3. Melanie - I did that many years ago (Christmas gifts baked in small ceramic loaf pans). The recipe I have is for 2 loaf pans. Recently I made it and instead of the loaf pans, I made mini muffins (24) and a bundt cake. I also iced it and substituted apple sauce for half the sugar and half the oil. They were so moist. I also add raisins and/or walnuts.

  4. The recipe sounds so good. I don't use the oven much around here with the warm weather. Maybe in a month or so. When it is cold, I like to make soups. Thank you for sharing your recipes.
