Ingredients:
2 cups flour
1/2 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup cut up Dole sliced peaches drained
1 egg
1/2 tsp. lemon extract
3/4 cup milk
3 tbsp. oil
Directions:
Mix dry ingredients. Add egg, lemon extract, milk and oil. Don’t over mix and mix by hand. Add cut up peaches. Drop into paper lined muffin tins or spray pan with PAM baking spray with flour like I do. Fill 2/3 full. Bake at 400 degrees for 18 to 20 minutes depending on your oven.
Notes:
Makes 6 large (notice one is missing in the above photo LOL!) muffins. You can substitute raisin or chocolate chips in place of peaches. I never made smaller muffins as I don’t have the smaller muffin tins.

DeleteThat really sounds delicious. I wish I'd seen that earlier...I had some leftover canned peaches that had been forgotten in the fridge...and had to be pitched. If I'd had this recipe, I could have done this with the peaches before they every got that way...so I'm saving this one for the next time!!! Sounds really good!! I love the picture at the top of your page too...so warm and inviting!! Have a "peachy" day!!
