Another Pumpkin Recipe

Around this time every year I've seen many different pumpkin bread recipes and not having much to post about I thought I'd post another one for you to see or copy to make for yourself and your family.

Pumpkin Bread
Ingredients

1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1-3/4 cups sugar
2 large eggs
2 tablespoons plus 1 teaspoon extra-light olive oil
3/4 cup canned unsweetened pumpkin puree
3 tablespoons water

Directions

Preheat the oven to 325 degrees F. Lightly oil a 9 x 5-inch loaf pan. In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. In a large bowl, with an electric mixer, beat together the sugar, eggs, oil and pumpkin. Add the flour mixture to the pumpkin mixture alternating with the water, beginning and ending with the flour mixture. Mix only until blended. Do not overmix. Spoon the batter into the loaf pan. Bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Let the loaf sit in the pan for 15 minutes, then turn out onto a wire rack to cool completely.

NOTES:  Makes 1 loaf (about 12 slices).

I'm keeping this short as we are having very high wind warnings and a possibility of a power outage. At least the heavy rains and flooding has subsided. So dear friends have a day of blessings.

  4. Sounds delicious! I would love some with butter or cream cheese on it..yum.
